Economical Eats: Enchilada Lasagna

Here's my latest edition to Economical Eats:

Ingredients:

1 lb of ground beef (or turkey)
1 can of black beans
2 cups of salsa
1 cup of sour cream
1/4 cup fat free zesty italian dressing
2 cups of shredded cheese
4 flour tortillas (burrito size)
2 Tbsps of Taco Seasoning

Instructions:
1. Preheat oven to 400 Degrees F.
2. Brown meat, drain, and put back in the pan.
3. Add beans, taco seasoning, dressing, and salsa to the meat and mix with heat on low.
4. Layer 2 tortillas in the bottom on a casserole dish.
5. Top with meat mixture, 1/2 cup of sour cream, and 1 cup of cheese
6. Layer on 2 more tortillas
7. Top with meat mixture, 1/2 cup of sour cream, and 1 cup of cheese
8. Cover with foil
9. Bake for 25-30 minutes with foil on and then for 3-5 with foil off.

Garnish with sour cream or lettuce if desired.
Makes about 8 servings.

*I was out of burrito size tortillas so I used 6 soft taco size instead. I was also out of italian dressing so I used apple cider vinegar instead.*
